Ingredients:

1/2 cup water
1/4 cup margarine
1/2 cup sifted flour
2 eggs
CUSTARD
FILLING
2 tablespoons margarine
1/4 cup cornflour
3/4 cup sugar
1/2 teaspoon salt
2 cups milk
2 egg yolks, slightly beaten
1 teaspoon vanilla
Directions:
1. For
creampuffs: heat the water and margarine to boiling in a saucepan. Stir the
sifted
flour in all at once.
2. Stir constantly with a wooden
spoon until mixture leaves pan and forms into a ball (about 1 minute).
Remove from heat; cool.
3. Beat in the eggs, one
at a time, in egg-beat-in egg-beating until smooth after each addition. Beat mixture until
smooth and velvety.
4. Put mixture into a piping bag (i used
ziplock bag and cut a small hole in one corner) pipe onto lightly greased
cookie sheet. Bake about 15 minutes in 220 celcius oven then reduce
heat to 177 celcius and bake for 10-15 minutes more.
5. Remove from oven, make a small hole
in them to allow steam to escape (I guess in the middle so you can fill them).
Fill with custard filling. *Another option is to cut the puff in
half but not through them, having them still attached, and pipe the custard in
them one by one.
6. For
custard filling: melt margarine in a saucepan. Blend in cornflour, sugar
and salt. Gradually add milk. Heat to boiling over direct heat. Stir mixture into
slightly beaten egg yolks.
7. Return to heat and cook 2 minutes,
stirring constantly until thickened. Add vanilla. Cool
thoroughly(put in freezer or fridge until completely cool and thickened).
